Bees Knees

So, I am drinking the Bees Knees beer (this is the beer I was bitching about with all the whole leaf hops). It is great! At 7.6% abv it gets the job done, but you don't taste any fusel alcohols, hot alcohols, etc. Willamette hops smell so floral and fresh with complimenting flavor. The beer just tastes sort of earthy and fresh, it is a good fall beer in my opinion. The malt backbone is there and supports all the ibus very well. Surprisingly, the beer is balanced even though I used 11.25 oz of hops (including dry hopping) for a calculated 96 IBUs. Pic below:

  1. Just went back and read the ingredient list. I was surprised that there's no honey, considering the name of the beer.

  2. Senor Brew >> That is a good idea. Would you use honey, or honey malt? I may rebrew this later this year.

  3. I have made a couple of brews with honey. I add it right at flame out, so you don't boil off that awesome flowery honey aroma. A pound or two per 5 gallon batch is enough to get a subtle honey flavor/aroma added to a lighter beer.
